Every April, Brie and Mac Confections celebrates its birthday and we are inviting you to join the party 🎉!

Whip up these fun, festive macarons at home to celebrate with us - or treat yourself (or someone else) anytime of the year!

Ready to bake? Grab our birthday cake filling recipe below to make with our famous easy 5 ingredient macaron recipe and bring the birthday magic to your kitchen.

What you’ll need:

Birthday Cake Ganache

  • 3 tbsp Heavy Cream

  • 1/2 cup White Chocolate Baking Chips

  • 1 tsp Vanilla Extract or Paste

  • 2 tbsp Vanilla Cake Mix (recipe below)

Homemade Gluten-Free Vanilla Cake Mix

  • 1 tbsp French vanilla pudding mix

  • 1 cup Almond Flour 

  • 1 ½ tsp Baking powder

  • ¼ tsp Salt

  • 1 cup Sugar

Short on time? You can also use your favorite gluten-free or non-gluten free box cake mix depending on your dietary needs! Here is a favorite brand of mine!

Use this birthday cake filling recipe with our easy 5 ingredient macaron recipe for a spectacular celebratory treat.

Steps

  1. Fill a double boiler or small saucepan with about a cup of water.

  2. Heat the double boiler or saucepan over medium heat until bowling.

  3. Add heavy cream to a medium sized mixing bowl or the top double boiler pan.

  4. Place medium sized bowl or double boiler with heavy cream on top of the small saucepan or lower double boiler pan.

  5. Pour white chocolate chips into a mixing bowl.

  6. Heat until heavy cream starts to simmer (not boiling).

  7. Pour the hot cream over the white chocolate chips in your second mixing bowl.

  8. Add vanilla extract or paste, dry vanilla cake mix, and mix together.

  9. Let the ganache cool for 5-10 minutes until it thickens. If you would like for the ganache to be whipped, cool ganache overnight and use a hand or stand mixer to whip the ganache into a spreadable, pipable cream.

Tips:

  • This filling can be used for macarons, spread over cakes, drizzled on top of cupcakes or can even be used as a dip for fruit or crackers.

  • Wipe down your clean utensils and bowls with vinegar to get rid of oily surfaces.

  • When chilling your ganache overnight in a bowl or container, make sure to cover the batter with plastic wrap to keep it from developing a hard topping.

  • When adding batter to the piping bag, twist the bag near the end of the tip to keep the batter from spilling out in the cup and place the piping bag in a tall cup or container for easy pouring.

  • A basic piping icing tip size 12 works best for piping your filling but if you want to have fun with different designs, definitely experiment by using a variety of piping tips for a unique look (even if you are topping it with a macaron shell).

  • With any leftover cake mix, feel free to mix with wet ingredients according to your own cake recipe or box cake instructions and you can place small pieces in the center of your macarons, along with the filling to pack even more birthday cake flavor.
